Issues with Theme

Hi, just getting into Wordpress and have a couple of questions.

1. I am having trouble stopping certain categories from showing up on the menu. I want to be able to select which categories i want on the menu.

2. I also want to be able to only show posts in the "Featured" category on the home page, any ideas on how to do that?

have found plugins to do this, thanks anyway
